Prepare rice according to package directions.

Peel and dice one avocado and set aside. In a large bowl, mash remaining avocado.

Add rice, tomatoes, garlic, onion, cilantro, jalapeno and lime juice and blend well.

Fold in reserved chopped avocado. Season with salt to taste. Serve with tortilla chips scoops or your favorite chip.
