Ingredients

1 lb ground meat
1/2 cup cooked Carolina® White Rice or Carolina® Whole Grain Brown Rice
1 onion, chopped
1/2 tsp pepper
1/2 green bell pepper, chopped
1 tsp salt
1/2 cup soup stock or bouillon
3 strips of bacon
brown gravy, optional

Cooking Directions

Preheat oven to 375°F. Prepare about 1/3 cup of rice according to package directions. In a medium-size bowl, combine all ingredients, except bacon. Form mixture into loaf and place on greased pan. Cover with bacon strips. Bake at 375°F for about 30-minutes. Top with brown gravy, if desired.
